Charcoal or gas

Charcoal barbecues burn lumpwood charcoal or briquettes, from compact kettle and tabletop models to larger grills. Gas barbecues run from a bottled gas cylinder through a hose and regulator, and some models can switch between gas and charcoal. Wood chips or chunks in a smoker box add smoke flavour. A fitted cover protects the barbecue from rain and dust between uses.

Gas safety

Before using a gas barbecue, check that valves seal properly with no leaks and that the hose, connections and cylinder are in good condition. Replace a hose or regulator that is worn or damaged. Keep gas cylinders outdoors, secured, and away from direct sunlight and frost.

Using a barbecue safely

• Never use a barbecue indoors or in an enclosed space such as a tent, caravan, awning or garage, because of the risk of fire and carbon monoxide poisoning.
• Do not put a used barbecue or burnt charcoal in a car or tent: it gives off carbon monoxide as it cools.
• Set the barbecue on a stable surface away from buildings, fences and plants, never leave it unattended, and keep children and pets at a safe distance.
• Light charcoal only with suitable firelighters or starter fuel, never petrol or other accelerants, and let the coals cool completely before disposal.
• Follow the manufacturer's instructions and safety data for barbecue and oven cleaners.
